Salad Mediterranean Pineapple Pasta Salad 6 ounces canned pineapple chunks, drained 6 ounces cooked and drained cheese tortellini 3 ounces turkey sausages, sliced, cooked and drained 3/8 cup diced red bell peppers 1 1/2 tablespoons chopped parsley 1 1/2 tablespoons olive oil 2 1/4 teaspoons balsamic vinegar 1/4 teaspoon salt 1/8 teaspoon pepper 1. In large bowl, combine pineapple, tortellini, sausage, bell pepper and parsley. 2. Combine remaining ingredients for salad dressing. Add dressing to salad; toss until mixed. Makes 2 Servings. Side Grilled Peaches And Berries Ingredients: large ripe peaches blueberries brown sugar lemon juice Preparations: Wash, peel and halve the peaches and remove the pit. Place each half on a double thickness of heavy-duty aluminum foil. Fill peach halves generously with fresh or frozen blueberries. Sprinkle 2 teaspoons brown sugar and 1 teaspoon lemon juice on each. Wrap securely. Cook on grill 18-20 minutes, turning once. Serve right out of the foil. Allow 1/2 peach per serving. Main course Broiled Halibut with Strawberry Mint Salsa provided by The Seduction Cookbook Ingredients: 10 ripe strawberries, stemmed and diced ½ cup chopped watercress 2 tablespoons chopped red onion 1 tablespoon chopped fresh mint leaves 1 tablespoon rice wine vinegar ¼ teaspoon finely diced serrano chile Salt and coarse ground black pepper to taste 2 8-ounce halibut filets Comments: According to The Dictionary of Aphrodisiacs by Harry E. Wedeck, halibut is considered to have particularly strong aphrodisiac properties. Preparations: 1. Gently toss together the salsa ingredients (all ingredients except halibut filets). Refrigerate. 2. Heat broiler. Season halibut with salt and pepper. Or Chocolate Kiss Ingredients: 1/2 ounce Creme de Cacao 1/2 ounce Frangelico liqueur 1/2 ounce vodka 6 ounces vanilla ice cream Preparations: Combine liquor with 2 scoops of vanilla ice cream, blend with ice and garnish with chocolate sprinkles. Dessert Fresh Strawberry Pie Ingredients: 1 baked 9-inch pie shell 1 1/4 cups sugar 1 tablespoon cornstarch 3 tablespoons lemon juice 1 3 oz. package strawberry Jello 1 quart fresh strawberries 1 1/2 cups water Preparations: Clean and hull strawberries. In medium saucepan, combine sugar and cornstarch; add water and lemon juice. Over high heat, bring to a boil. Reduce heat; cook and stir until slightly thickened and clear, 4 to 5 minutes. Add gelatin, stir until dissolved. Cool to room temperature. Stir in strawberries; turn into prepared pastry shell. Chill 4 to 6 hours or until set. Serve with whipped cream if desired.
