California Cheese Dip with Fresh Fruits
4 ounces cream cheese
2 tablespoons cream, or milk
3 teaspoons honey
3/4 teaspoon vanilla
1/16 teaspoon nutmeg, or mace
1/16 teaspoon cinnamon
3 teaspoons fresh lemon juice
2 tablespoons diced toasted almonds
Blend together all ingredients except almonds. Chill. When ready to serve place dip in small bowl. Top with
almonds. Place bowl on plate and surround with assorted fruits such as banana slices, melon cubes, grapes,
strawberries and peach or nectarine slices.
Makes 2 Servings.
Mediterranean Pineapple Pasta Salad
6 ounces canned pineapple chunks, drained
6 ounces cooked and drained cheese tortellini
3 ounces turkey sausages, sliced, cooked and drained
3/8 cup diced red bell peppers
1 1/2 tablespoons chopped parsley
1 1/2 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1. In large bowl, combine pineapple, tortellini, sausage, bell pepper and parsley.
2. Combine remaining ingredients for salad dressing. Add dressing to salad; toss until mixed.
Makes 2 Servings.
Grilled Peaches And Berries
large ripe peaches
Wash, peel and halve the peaches and remove the pit. Place each half on a double thickness of heavy-duty
aluminum foil. Fill peach halves generously with fresh or frozen blueberries. Sprinkle 2 teaspoons brown sugar
and 1 teaspoon lemon juice on each. Wrap securely. Cook on grill 18-20 minutes, turning once. Serve right out
of the foil. Allow 1/2 peach per serving.
Broiled Halibut with Strawberry Mint Salsa

10 ripe strawberries, stemmed and diced
½ cup chopped watercress
2 tablespoons chopped red onion
1 tablespoon chopped fresh mint leaves
1 tablespoon rice wine vinegar
¼ teaspoon finely diced serrano chile
Salt and coarse ground black pepper to taste
2 8-ounce halibut filets
According to The Dictionary of Aphrodisiacs by Harry E. Wedeck, halibut is considered to have particularly
strong aphrodisiac properties. Top this amorous denizen of the deep with sweet spring strawberries, chakras-
stimulating mint, and serrano chiles, which contain capsaicin, a fiery chemical that causes the brain to produce
endorphins, igniting a sense of well being.
1. Gently toss together the salsa ingredients (all ingredients except halibut filets). Refrigerate.
2. Heat broiler. Season halibut with salt and pepper. Place under broiler and cook for about 4 minutes on each
side, until flaky but tender. Serve immediately with salsa.
Serve with steamed white rice mixed with freshly chopped parsley and mint.
Makes 2 Servings.
Passion Peach Champagne
2 champagne glasses
1 bottle champagne
1 fresh peach — peeled
Fill glasses with champagne to 3/4 full. Peel, seed and slice peach. Place in champagne. Serve in champagne
Makes 2 Love Drinks.
1/2 ounce Creme de Cacao
1/2 ounce Frangelico liqueur
1/2 ounce vodka
6 ounces vanilla ice cream
Combine liquor with 2 scoops of vanilla ice cream, blend with ice and garnish with chocolate sprinkles.
Makes 1 Love Drink.
Fresh Strawberry Pie
1 baked 9-inch pie shell
1 1/4 cups sugar
1 tablespoon cornstarch
3 tablespoons lemon juice
1 3 oz. package strawberry Jello
1 quart fresh strawberries
1 1/2 cups water
Clean and hull strawberries. In medium saucepan, combine sugar and cornstarch; add water and lemon juice.
Over high heat, bring to a boil. Reduce heat; cook and stir until slightly thickened and clear, 4 to 5 minutes. Add
gelatin, stir until dissolved. Cool to room temperature. Stir in strawberries; turn into prepared pastry shell. Chill
4 to 6 hours or until set. Serve with whipped cream if desired. Refrigerate leftovers.
Makes 1 Pie.
